One evening, we had stopped at Pita Pit near Indianapolis. Pita Pit has a variety of Pita pockets served Subway style – you get to choose the type of Pita you want and choose your ‘toppings’. It is a healthy option compared to fast foods and got me inspired to make one at home. Here is a pita pocket dish we had for lunch today
Couple of pita breads
2 chicken breasts (it helped make 5 pita pockets)
Note: The toppings are only limited to your imagination, you can mix and add as many toppings as you like. Find the ones that work for you
1. Grill the chicken breasts. I rubbed some taco seasoning on mine before grilling on a cast iron skillet. Set aside once done and slice into bite sized chunks
2. Caramelize the onions. I add a dash of oil on to the pan, along with the onions and some salt. Leave it on medium and stir often till the onions start to turn brown. I add tiny bit of sugar to help caramelize the onions. I feel it adds a depth of flavor as well. It ought to take about 10-15 minutes
3. Follow the onions with mushrooms till they are caramelized and cooked. It ought to take about 5-10 minutes
4. Time to assemble the pita pockets: I microwave the pita bread for 30 seconds before assembling. Open the pita bread and start with the grilled chicken, spread a layer of mayo or light mayo. Then add the caramelized onions followed by mushrooms. Finish off with tomatoes and lettuce. Done!
