Mini Quiche – Potato, Egg, Bacon, Spinach style

Mini 'Quiches' with potato, egg and bacon

So this other day, I was debating what to make for breakfast. I wanted to make something easy and fast but yet nutritious. I was thinking of mini Quiches – Quiches made using muffin pan. These are cute little bite sized Quiches that are quick to make and just as delicious. I tweaked it a bit. I am not sure if these are technically Quiches but they were just delicious and my kids just gobbled them up. Below is my recipe

Ingredients

2 russet potatoes peeled and shredded

3 eggs

Bacon crumbled (as much as you like)

Spinach leaves shredded (as much as you like)

Cheddar cheese shredded (as much as you like)

Salt and pepper to taste

Steps:

1. Preheat the oven to 350 F2. Press down about quarter cup of shredded potato in each muffin cup. Put the pan in the over till the potatoes turn slightly golden brown on the outside. It should take about 10-15 minutes. Two medium potatoes make up about 6-8 muffin cups

3. In the meantime, beat the eggs. Add the shredded cheese, bacon and spinach and stir the mixture till well mixed. Add salt and pepper to taste

4. Pour the mixture till top of each cup. Pop the pan back in the over for another 10 mins till the cheese is bubbling

5. Once done, use a plastic spatula to loosen the muffin cups out of the pan while it is hot. Enjoy!
